Cranberry Orange Cookies

Ingredients:
For the Cookies:
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg, room temperature
- 1 tablespoon orange zest (from about 1 large orange)
- 2 tablespoons fresh orange juice
- 2 cups (250g) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup dried cranberries, chopped
- 1/2 cup white chocolate chips (optional)
For the Glaze:
- 1 cup (120g) powdered sugar
- 1-2 tablespoons fresh orange juice
- 1/2 teaspoon orange zest
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add Wet Ingredients: Beat in the egg until well combined. Add the orange zest and fresh orange juice, mixing until incorporated.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in Cranberries and Chocolate Chips: Gently fold in the chopped dried cranberries and white chocolate chips (if using) until evenly distributed throughout the dough.
- Form the Cookies: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may appear slightly soft, but they will firm up as they cool.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare the Glaze: In a small bowl, whisk together the powdered sugar, orange juice, and orange zest until smooth. Adjust the consistency with more juice or sugar as needed.
- Glaze the Cookies: Once the cookies are completely cooled, drizzle the glaze over the tops using a spoon or piping bag. Allow the glaze to set before serving.
Tips:
- For an extra burst of orange flavor, add a teaspoon of orange extract to the cookie dough.
- If you prefer fresh cranberries, you can use them instead of dried, but you may need to add a bit more sugar to balance the tartness.
