Creamy Bacon Potato Chowder – A Hearty & Comforting One-Pot Meal
This rich and Creamy Bacon Potato Chowder is the ultimate comfort food for cozy nights. Loaded with tender potatoes, smoky bacon, and a velvety cheese-infused broth, this easy one-pot soup is both satisfying and irresistibly flavorful. Ideal for family dinners, meal prep, or chilly evenings.
Ingredients

5 slices bacon, chopped

1 tbsp butter

1 small onion, diced

2 cloves garlic, minced

3 cups potatoes, peeled and diced

3 tbsp all-purpose flour

3 cups chicken broth

1 cup milk

1 cup heavy cream

1 ½ cups shredded cheddar cheese

Salt and black pepper to taste

2 tbsp chopped chives (for garnish)
Instructions
Step 1: Cook the Bacon
In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside, leaving 1–2 tbsp of bacon fat in the pot.
Step 2: Sauté the Aromatics
Add butter to the bacon fat. Sauté onion until soft, about 3–4 minutes. Add garlic and cook for another 30 seconds.
Step 3: Add Potatoes & Broth
Stir in flour and cook for 1 minute. Gradually whisk in chicken broth. Add potatoes and bring to a boil. Reduce heat, cover, and simmer until potatoes are tender (about 15 minutes).
Step 4: Make It Creamy
Add milk, cream, and cheddar cheese. Stir gently until cheese is melted and soup is thickened. Season with salt and pepper.
Step 5: Finish and Serve
Stir in the crispy bacon (reserving some for garnish). Serve hot, topped with extra bacon and chopped chives.
