Ingredients (Base Recipe)

  • 3 ripe bananas, mashed

  • ½ cup white sugar

  • ¼ cup brown sugar

  • 2 large eggs

  • ½ cup vegetable oil

  • 1 teaspoon vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon cinnamon

  • ¼ teaspoon salt

  • ½ cup crushed pineapple (drained)

  • ½ cup chopped pecans (optional)

For the Cinnamon Cream Cheese Frosting

  • 4 oz cream cheese, softened

  • 2 tablespoons unsalted butter, softened

  • 1 cup powdered sugar

  • ½ teaspoon cinnamon

  • ½ teaspoon vanilla extract

  • 1–2 tablespoons milk (to reach desired consistency)

  • Extra pecans for garnish (optional)

Directions

Step 1: Preheat and Prepare

Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.

Step 2: Mix the Batter

In a large bowl, whisk together mashed bananas, sugars, eggs, oil, and vanilla. In a separate bowl, mix flour, baking soda, cinnamon, and salt. Gradually combine the dry ingredients with the wet mixture until just blended. Fold in pineapple and pecans.

Step 3: Bake

Pour the batter into the prepared loaf pan. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool completely before frosting.

Make the Frosting

In a bowl, beat cream cheese and butter until smooth. Add powdered sugar, cinnamon, and vanilla. Mix until fluffy, then add milk as needed to reach a spreadable consistency.

Finishing Touch

Spread the frosting generously over the cooled bread. Sprinkle with chopped pecans for a beautiful, nutty finish.
