Ingredients:

  • 8 oz (225 g) cream cheese, softened

  • 1/2 cup (100 g) granulated sugar

  • 1 tablespoon lemon zest (from 1–2 lemons)

  • 1/4 cup (60 ml) fresh lemon juice

  • 1 teaspoon vanilla extract

  • 1 cup (240 ml) heavy whipping cream

  • Optional: crushed graham crackers or cookies for topping


‍ Instructions:

1. Prepare the Cream Cheese Base:

In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.

2. Add the Lemon:

Mix in the lemon zest, lemon juice, and vanilla extract. Beat again until fully combined and silky.

3. Whip the Cream:

In a separate bowl, whip the heavy cream until stiff peaks form. This will give the mousse its airy texture.

4. Fold It All Together:

Gently fold the whipped cream into the lemon cheesecake mixture until fully incorporated. Be careful not to deflate the cream.

5. Chill and Serve:

Spoon the mousse into serving glasses or bowls. Chill for at least 1 hour before serving.

Top with graham cracker crumbs, lemon zest, or even a dollop of whipped cream for extra flair.
