Looking for a creamy, tropical treat that melts in your mouth? These Pineapple Coconut Cheesecake Bars are the ultimate combination of tangy pineapple, sweet coconut, and luscious cream cheese—perfect for summer parties, potlucks, or when you’re simply craving paradise in every bite.

 Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup melted butter

  • 2 tablespoons granulated sugar

For the Cheesecake Layer:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup crushed pineapple, well-drained

  • ½ cup shredded sweetened coconut

 Instructions

1. Preheat the Oven:

Preheat your oven to 325°F (165°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper for easy removal.

2. Prepare the Crust:

In a mixing bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom of the prepared pan to form an even layer.

3. Make the Cheesecake Filling:

In a separate bowl, beat the cream cheese and ½ cup sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

4. Add the Fruit & Coconut:

Gently fold in the drained crushed pineapple and shredded coconut until evenly incorporated into the cream cheese mixture.

5. Assemble & Bake:

Pour the cheesecake filling over the prepared crust and spread it evenly. Bake for 30–35 minutes, or until the center is set and the edges are slightly golden.

6. Cool & Chill:

Allow the bars to cool completely at room temperature. Then refrigerate for at least 2 hours (or overnight) to firm up. Slice into bars and serve chilled.

 Tips for Best Results:

  • Drain pineapple well to avoid excess moisture in the filling.

  • Add toasted coconut on top before baking for extra texture and flavor.

  • Store leftovers in an airtight container in the fridge for up to 4 days.
