Ingredients

  • 3 ribeye steaks, each about 1 inch thick
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, smashed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Prepare Steaks: Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels to remove any moisture.
  2. Season Steaks: Generously season both sides of the steaks with salt and pepper. Press the seasoning into the meat to ensure it adheres well.
  3. Heat Pan: Preheat a cast-iron skillet over high heat until it is smoking hot. Add the olive oil and swirl to coat the pan.
  4. Sear Steaks: Place the steaks in the hot skillet, making sure not to overcrowd the pan. Sear the steaks for 2-3 minutes on each side, or until a golden-brown crust forms. Avoid moving the steaks during searing to ensure a perfect crust.
  5. Add Aromatics: Reduce the heat to medium. Add the butter, smashed garlic, rosemary, and thyme to the pan. Tilt the pan and use a spoon to baste the steaks with the melted butter and aromatics.
  6. Finish Cooking: Continue to cook the steaks, flipping and basting them with the aromatic butter until they reach your desired level of doneness. For medium-rare, the internal temperature should be about 130°F (54°C).
  7. Rest Steaks: Remove the steaks from the pan and place them on a cutting board. Cover them loosely with aluminum foil and let them rest for 5-10 minutes to allow the juices to redistribute.
  8. Serve: Slice the steaks against the grain and serve immediately with your favorite sides.
