INGREDIENTS

  • 4 slices diced bacon
  • 1 medium onion, finely chopped
  • 2 cloves garlic, chopped
  • 2 pounds fresh green beans, chopped
  • 2 1/2 – 3-1/2 cups chicken broth
  • Optional 1 teaspoon Cajun seasoning (see notes) . )
  • 2 tablespoons butter
  • Salt and black pepper to taste

In a large pot or saucepan over medium heat, cook bacon until almost completely browned. Add the onion and cook for another 5 minutes. Reduce heat and add garlic; Let cook for 30 seconds. Using a slotted spoon, transfer the bacon and onion mixture to a bowl. Reserve the bacon fat.Do not wash the pot.
Add the green beans and enough chicken broth to cover the green beans. Add the Cajun seasoning.
Bring to a boil. Cover and reduce heat until simmering.Simmer for 1 – 1 1/2 hours, stirring occasionally. Drain the chicken broth, add the bacon and onion mixture back and heat for 1-2 minutes. Add the butter, stir and serve. Season with salt and black pepper if necessary.

NOTES

Readers with more sensitive palates who would like things milder may add a few pinches of crushed red pepper and about half a teaspoon of freshly ground pepper and salt.If you really like it a little more moderate, half a teaspoon of freshly ground pepper and salt is enough to season. Any combination of the above is also good as most people know their tolerance to spices.
Try adding a ham hock or smoked sausage to the boiling beans. Or pieces of red potatoes or new potatoes.
Store leftovers in an airtight container in the refrigerator.Reheat in the microwave at reduced power.
