Fluffy Sponge, Sweet Cream, and Juicy Strawberries – A Dessert Delight!

This Strawberry Cream Roll Cake is light, airy, and filled with luscious whipped cream and fresh strawberries, all wrapped inside a soft sponge cake. It’s perfect for spring gatherings, summer parties, or any time you want a show-stopping dessert with a burst of fruity freshness.


Ingredients

For the Sponge Cake:

  • 4 large eggs

  • ½ cup granulated sugar

  • 1 tsp vanilla extract

  • ⅔ cup all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • Powdered sugar (for dusting the towel)

For the Whipped Cream Filling:

  • 1 ½ cups heavy whipping cream (cold)

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract

For the Assembly:

  • 2 cups fresh strawberries, hulled and sliced

  • Crushed nuts or sponge crumbs (for coating sides, optional)

  • Additional powdered sugar (for dusting)


‍ Instructions

1. Prepare the Cake:

  • Preheat oven to 350°F (175°C).

  • Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.

  • In a bowl, beat the eggs and sugar on high for 5–6 minutes until thick and pale.

  • Add vanilla. Sift in flour, baking powder, and salt. Gently fold to combine.

  • Spread batter evenly in the pan and bake for 10–12 minutes, or until lightly golden and springy to the touch.

2. Roll the Cake:

  • Lay a clean kitchen towel on a flat surface and dust it with powdered sugar.

  • While cake is still warm, invert it onto the towel and peel off parchment paper.

  • Gently roll the cake in the towel (starting from the short side) and let cool completely.

3. Make the Cream:

  • Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.

4. Assemble the Roll:

  • Carefully unroll the cooled cake.

  • Spread an even layer of whipped cream and place sliced strawberries throughout.

  • Roll the cake back up gently (without towel).

  • Optional: Coat the roll in cream and sprinkle with crushed sponge or nuts.

5. Chill and Serve:

  • Chill for 30 minutes before slicing.

  • Dust with powdered sugar before serving. Enjoy!


Tips:

  • Use firm, ripe strawberries for the best texture.

  • Don’t skip the powdered sugar on the towel — it prevents sticking!
