Crab and Shrimp Seafood Bisque

INGREDIENTS

  • 1 lb shrimp, peeled and deveined
  • 1 lb crabmeat
  • 4 tablespoons unsalted butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/4 cup dry sherry
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped sparkling parsley, for garnish

 

INSTRUCTIONS

  1. In a giant pot, soften the butter over medium heat. Add the diced onion and minced garlic, and sauté till softened, about 5 minutes.
  2. Sprinkle the flour over the onion and garlic mixture, stirring constantly, till it varieties a clean paste, about two minutes.
  3. Gradually pour in the seafood stock, whisking continuously to forestall lumps from forming. Bring the combination to a simmer and let it cook dinner for 5 minutes, till barely thickened.
  4. Add the shrimp and crabmeat to the pot, stirring gently. Let the seafood simmer in the broth for about 5-7 minutes, till the shrimp are red and cooked through.
  5. Stir in the heavy cream, dry sherry, and paprika. Season with salt and pepper to taste.
  6. Allow the bisque to simmer for an extra 5 minutes to enable the flavors to meld together.
  7. Ladle the bisque into bowls and garnish with chopped sparkling parsley.
    Serve warm with crusty bread or oyster crackers on the side.
