Blueberry Cheesecake

Ingredients:

For the Crust:
  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup blueberry puree (blend fresh or frozen blueberries)
  • 1 tablespoon cornstarch
For the Creamy Topping:
  • 1 cup sour cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
For Decoration:
  • Fresh blueberries

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 325°F (163°C).
    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
    • Press the mixture into the bottom of a 9-inch springform pan. Use the bottom of a glass to press the crust firmly and evenly.
    • Bake the crust for 10 minutes, then remove from the oven and let it cool while preparing the filling.
  2. Make the Cheesecake Filling:
    • In a large bowl, beat the cream cheese and granulated sugar until smooth and creamy.
    • Add the sour cream and vanilla extract, and beat until well combined.
    • Add the eggs one at a time, beating well after each addition.
    • In a small bowl, mix the blueberry puree and cornstarch until smooth. Gently fold this mixture into the cream cheese mixture until well combined.
  3. Bake the Cheesecake:
    • Pour the cheesecake filling over the cooled crust.
    • Place the springform pan in a larger baking pan and fill the larger pan with hot water until it reaches halfway up the sides of the springform pan (this water bath helps prevent cracks in the cheesecake).
    • Bake for 55-65 minutes, or until the center is set but still slightly jiggly.
    • Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly ajar.
    • Remove the cheesecake from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  4. Prepare the Creamy Topping:
    • In a medium bowl, combine the sour cream, powdered sugar, and vanilla extract. Mix until smooth.
    • Spread the creamy topping over the chilled cheesecake.
  5. Decorate and Serve:
    • Decorate the top of the cheesecake with fresh blueberries.
    • Slice and serve your delicious blueberry cheesecake.
