Glazed Jam-Filled Cookies

Ingredients:

For the Cookies:

  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120 g) your choice of jam or preserves (such as raspberry, strawberry, or apricot)

For the Glaze:

  • 1 cup (120 g) powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Cookie Dough:
    • In a large bowl, cream together the butter and granulated sugar until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  2. Shape and Fill the Cookies:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Roll the dough into 1-inch (2.5 cm) balls and place them on the prepared baking sheet about 2 inches (5 cm) apart.
    • Use your thumb or the back of a teaspoon to make an indentation in the center of each cookie.
    • Fill each indentation with a small amount of jam.
  3. Bake the Cookies:
    • Bake the cookies in the preheated oven for 12-15 minutes or until the edges are lightly golden.
    • Remove from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  4. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk if needed.
    • Drizzle the glaze over the cooled cookies.
  5. Serve:
    • Allow the glaze to set before serving. Enjoy your delicious jam-filled cookies with a creamy glaze!
