Glazed Jam-Filled Cookies
Ingredients:

For the Cookies:
- 1 cup (225 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (120 g) your choice of jam or preserves (such as raspberry, strawberry, or apricot)
For the Glaze:
- 1 cup (120 g) powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions:
- Prepare the Cookie Dough:
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Shape and Fill the Cookies:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll the dough into 1-inch (2.5 cm) balls and place them on the prepared baking sheet about 2 inches (5 cm) apart.
- Use your thumb or the back of a teaspoon to make an indentation in the center of each cookie.
- Fill each indentation with a small amount of jam.
- Bake the Cookies:
- Bake the cookies in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Remove from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk if needed.
- Drizzle the glaze over the cooled cookies.
- Serve:
