INGREDIENTS

– two kilos cod, hake, or different white fish
– 1 half of cups all-purpose flour
– half cup cornstarch
– 1 tablespoon baking powder
– two teaspoons kosher salt
– half teaspoon cayenne pepper
– 1 half of cups water
– Vegetable oil for frying
INSTRUCTIONS
1. Preheat the oil to 350°F in a deep fryer or a medium-sized saucepan.
2. In a medium bowl, mix the flour, cornstarch, baking powder, salt, and cayenne pepper.
3. Whisk in the water till the batter is easy and barely foamy.
4. Pat the fish dry with a paper towel to put off extra moisture.
5. Dip every fish fillet into the batter, making sure it is completely coated.
6. Deep-fry the fillets for three to four minutes till they are golden brown. If frying a couple of pieces, keep away from overcrowding the fryer.
7. Once cooked, let the fish drain on a wire rack.
