  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground ginger (optional)

  • 1 1/4 cups vegetable oil

  • 1 cup granulated sugar

  • 1 cup brown sugar

  • 4 large eggs

  • 2 teaspoons vanilla extract

  • 3 cups grated carrots (about 4–5 medium carrots)

  • 1/2 cup chopped walnuts or pecans (optional)

  • 1/2 cup crushed pineapple, drained (optional for extra moisture)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened

  • 1/2 cup unsalted butter, softened

  • 3 cups powdered sugar

  • 1 teaspoon vanilla extract

  • Pinch of salt

‍ Instructions

Step 1: Prepare the Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch sheet pan or line it with parchment paper.

  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger.

  3. In a large bowl, beat together oil, granulated sugar, and brown sugar until combined.

  4. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.

  5. Gradually mix in the dry ingredients until just combined.

  6. Fold in grated carrots, nuts, and pineapple (if using).

  7. Pour the batter into the prepared pan and spread evenly.

Step 2: Bake

  • Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

  • Let the cake cool completely in the pan.

Step 3: Make the Frosting

  1. In a large bowl, beat together cream cheese and butter until smooth and fluffy.

  2. Gradually add the powdered sugar, mixing until creamy.

  3. Stir in vanilla extract and a pinch of salt.

Step 4: Frost and Serve

  • Spread the frosting evenly over the cooled cake.

  • Optional: top with additional chopped nuts or a light dusting of cinnamon.

  • Slice and enjoy!
