Instructions

  1. Prepare the Crust:
    • Preheat the oven to 160°C (320°F).
    • Crush the biscuits into fine crumbs using a food processor or a ziplock bag with a rolling pin.
    • Mix the crumbs with melted butter until evenly coated, resembling wet sand.
    • Press the mixture firmly into the base of a springform pan lined with parchment paper, spreading it slightly up the sides.
    • Bake the crust for 10 minutes, then set it aside to cool.
  2. Make the Filling:
    • Beat cream cheese until smooth, avoiding over-mixing to prevent aeration.
    • Add sugar, flour, and vanilla extract, mixing until just combined.
    • Blend in the sour cream and lemon zest, then incorporate the eggs one at a time, mixing briefly after each addition.

    • Pour the filling onto the cooled crust and smooth the surface.
    • Bake for about 55 minutes. The center should be slightly wobbly when gently shaken.
    • Turn off the oven, leaving the cheesecake inside with the door ajar for about 30 minutes to cool gradually.

    • Refrigerate the cheesecake for at least 4 hours (preferably overnight) to set completely before removing it from the pan.
