Cheesy Bacon and Ground Beef Casserole

Ingredients:

  • 1 pound ground beef
  • 6 slices bacon, cooked and crumbled
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups thinly sliced potatoes (about 4-5 medium potatoes)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Ground Beef: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and garlic, cooking until softened, about 5 minutes. Add the ground beef and cook until browned. Drain any excess fat.
  3. Season the Meat: Add the thyme, rosemary, paprika, salt, and black pepper to the cooked ground beef mixture. Stir to combine.
  4. Prepare the Casserole Dish: In a large mixing bowl, combine the cream of mushroom soup and milk until smooth. Add the thinly sliced potatoes to the mixture and stir to coat.
  5. Assemble the Casserole: In a greased 9×13-inch baking dish, layer half of the potato mixture. Add a layer of the ground beef mixture, then sprinkle half of the shredded cheddar and mozzarella cheese. Repeat with the remaining potato mixture, ground beef, and top with the remaining cheese.
  6. Add Bacon: Sprinkle the crumbled bacon over the top of the casserole.
  7. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Serve: Let the casserole cool for a few minutes before serving.
