Cheesy Baked Burrito Recipe
Ingredients:
- 4 large flour tortillas
- 2 cups cooked and shredded chicken (or ground beef)
- 1 can (15 oz) refried beans
- 1 cup cooked rice
- 1 cup salsa
- 2 cups shredded cheddar cheese (or Mexican blend cheese)
- 1 cup enchilada sauce
- 1 cup shredded mozzarella cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a baking dish.
- Prepare Filling: In a large bowl, mix the cooked chicken (or ground beef) with refried beans, cooked rice, salsa, shredded cheddar cheese, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
- Assemble Burritos: Lay out a flour tortilla and place a generous amount of the filling in the center. Roll up the tortilla, folding in the sides as you go, to form a burrito. Place the burrito seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
- Add Sauce and Cheese: Pour the enchilada sauce over the top of the burritos. Sprinkle shredded mozzarella cheese evenly over the top.
- Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve: Allow the cheesy baked burritos to cool for a few minutes before serving. Enjoy them with your favorite toppings such as sour cream, guacamole, or extra salsa.
