Cheesy Baked Meatloaf

Ingredients:

  • For the Meatloaf:
    • 2 pounds ground beef
    • 1 cup breadcrumbs
    • 1 cup grated Parmesan cheese
    • 1/2 cup milk
    • 2 eggs, beaten
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon dried parsley
    • 1 teaspoon dried thyme
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
  • For the Topping:
    • 1 cup marinara or tomato sauce
    • 1 cup shredded mozzarella cheese
    • 1/4 cup grated Parmesan cheese
    • 1 tablespoon dried parsley

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, beaten eggs, chopped onion, minced garlic, Worcestershire sauce, dried parsley, dried thyme, salt, and black pepper.
    • Mix everything until well combined but do not overwork the meat.
  3. Shape the Meatloaf:
    • Transfer the meat mixture into a loaf pan or shape it into a loaf shape on a baking sheet lined with parchment paper.
  4. Bake the Meatloaf:
    • Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).
  5. Add the Topping:
    • Remove the meatloaf from the oven and spread the marinara or tomato sauce over the top.
    • Sprinkle the shredded mozzarella cheese, grated Parmesan cheese, and dried parsley evenly over the sauce.
  6. Final Bake:
    • Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and golden brown.
  7. Serve:
    • Allow the meatloaf to rest for 10 minutes before slicing.
    • Serve warm, garnished with additional dried parsley if desired.
