  • 2 lbs chicken, cut into serving pieces

  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, julienned
  • 1-2 stalks lemongrass (optional), bruised
  • 6 cups water
  • 1 tbsp fish sauce (patis)
  • 2 tbsp cooking oil

  5. Add the green papaya and simmer for another 10-15 minutes until tender.
