Classic Southern Potato Salad Recipe

Ingredients:

  • 5 pounds of russet potatoes, peeled and cubed
  • 6 large eggs
  • 1 1/2 cups mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup sweet pickle relish
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Paprika (optional, for garnish)

Instructions:

  1. Cook the Potatoes: Place the peeled and cubed potatoes in a large pot and cover with water. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until the potatoes are tender but not mushy, about 10-15 minutes. Drain and let them cool slightly.
  2. Boil the Eggs: While the potatoes are cooking, place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat and cover with a lid. Let the eggs sit for 10-12 minutes. Drain and cool the eggs under cold running water, then peel and chop them. Reserve a few slices for garnish.
  3. Combine Ingredients: In a large mixing bowl, combine the cooled potatoes, chopped eggs, mayonnaise, yellow mustard, sweet pickle relish, chopped onion, and chopped celery. Gently fold the ingredients together until well combined. Season with salt and black pepper to taste.
  4. Garnish and Chill: Transfer the potato salad to a serving bowl. Garnish with the reserved egg slices and sprinkle with paprika, if desired. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  5. Serve: Serve the potato salad chilled. Enjoy this classic Southern side dish with your favorite barbecue, fried chicken, or as part of a picnic spread.
