CRAB STUFFED MUSHROOMS

INGREDIENTS

  • 12 medium button or cremini mushrooms, cleaned, stemmed and discarded
  • Olive oil spray
  • 1 box (8 ounces) cream cheese, softened
  • 1/2 cup fresh breadcrumbs or panko breadcrumbs
  • 2 garlic cloves, minced
  • 1/2 tablespoon Worcestershire Sauce
  • 1/2 cup finely chopped green onions
  • 1/2 cup freshly grated Parmesan cheese
  • 2-3 tablespoons chopped fresh Italian parsley
  • 1 cup finely chopped, peeled cooked crab (I use king crab)
  • Salt and pepper to taste

Oven preheat to 375 degrees.
Spray the mushrooms lightly with olive oil spray and place them cap side down on a baking sheet or baking dish. In a large bowl, stir together cream cheese, breadcrumbs, garlic, Worcestershire sauce, chives, Parmesan, parsley and crab meat. Season with salt and pepper.
Place about 1 1/2 tablespoons of the cream cheese mixture on each mushroom.Bake for 20 minutes. Turn on the broiler in the last minute of cooking to lightly brown the top. Stick around as I have always found broilers to be unpredictable.

NOTES

Storage Instructions: Store leftovers in an airtight container in the refrigerator for up to 48 hours. Warm up briefly in the microwave at reduced power.For something special, you can add 1/4 teaspoon cayenne pepper or 1/4 teaspoon crushed red pepper.
I received this tip from a reader. Pre-cook the mushrooms for about 2-3 minutes. Turn them out onto a rack and drain them so they don’t drip when you bite into them.
If you like it a little spicier, add some cayenne pepper or crushed red pepper.I use the large mushrooms, but you can definitely use the smaller mushrooms for a party, and this recipe goes even further. Remember to reduce the cooking time by a few minutes for smaller mushrooms.
Use cooked crab meat and slice it very thinly.
Freshly grated Parmesan cheese is a must. It tastes much better than the contents of the jar, so use it.Fresh breadcrumbs are great in this recipe. You can always use croutons and grind them in a bag or food processor. Most croutons contain fewer preservatives and artificial ingredients than processed breadcrumbs.
