When gift-giving time approaches, a feeling of panic often arises. Who wants what, when are the best sales and have we forgotten anyone? While you can’t skip all shopping, I’ve tried my best to stick to homemade gifts when possible, and for me that means food. A favorite with friends and family alike, this blueberry bread makes a perfect last-minute gift.
Ingredients
- 2 cups sugar
- 3 eggs, room temperature
- ¾ cup butter, room temperature
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
- 2 cups flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 bag (8 oz) fresh blueberries
- Streusel
- ¼ cup brown sugar
- ¼ cup flour
- ⅓ cup butter
How to bake blueberry bread
Preheat the oven to 350 degrees F and well grease 2 loaf pans (this can also be used as a very large loaf or in the 9-inch cake pan).
In a large bowl, add the eggs and sugar and beat for 5 minutes until the mixture has almost doubled in volume (don’t skip this step!).
Stir in butter, vanilla and almond extract until smooth.
Gently mix the flour, baking powder and salt, then add the cranberries.Pour the batter into the prepared pans.
In a small bowl, mix all topping ingredients until a sandy consistency is formed. Sprinkle over the bread.
Bake 45 to 50 minutes for 2 loaves or 60 to 70 minutes for 1 large loaf. Bake until a toothpick inserted comes out clean.Allow the loaves to cool before slicing.
