Creamy Parmesan Italian Sausage Soup
Ingredients:
- 1 pound Italian sausage, casing removed
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups baby spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions:
- Brown the Sausage:
- In a large pot, heat the olive oil over medium heat.
- Add the Italian sausage and cook until browned, breaking it up with a spoon.
- Remove excess fat if necessary.
- Cook the Onions and Garlic:
- Add the chopped onion and minced garlic to the pot.
- Cook until the onion is translucent, about 3-4 minutes.
- Add the Broth and Tomatoes:
- Pour in the chicken broth and diced tomatoes.
- Bring the mixture to a simmer.
- Add Cream and Cheese:
- Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning.
- Simmer for 10 minutes, stirring occasionally.
- Add Spinach:
- Add the baby spinach and cook until wilted, about 2 minutes.
- Season and Serve:
- Season with salt and pepper to taste.
- For a thicker soup, add a tablespoon of cornstarch mixed with a tablespoon of water.
- Serve with crusty bread or garlic bread for a comforting meal.
