Creamy Parmesan Italian Sausage Soup

Ingredients:

  • 1 pound Italian sausage, casing removed
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions:

  1. Brown the Sausage:
    • In a large pot, heat the olive oil over medium heat.
    • Add the Italian sausage and cook until browned, breaking it up with a spoon.
    • Remove excess fat if necessary.
  2. Cook the Onions and Garlic:
    • Add the chopped onion and minced garlic to the pot.
    • Cook until the onion is translucent, about 3-4 minutes.
  3. Add the Broth and Tomatoes:
    • Pour in the chicken broth and diced tomatoes.
    • Bring the mixture to a simmer.
  4. Add Cream and Cheese:
    • Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning.
    • Simmer for 10 minutes, stirring occasionally.
  5. Add Spinach:
    • Add the baby spinach and cook until wilted, about 2 minutes.
  6. Season and Serve:
    • Season with salt and pepper to taste.
    • For a thicker soup, add a tablespoon of cornstarch mixed with a tablespoon of water.
    • Serve with crusty bread or garlic bread for a comforting meal.
