Crockpot Chicken Wild Rice Soup

This Crockpot Chicken Wild Rice Soup is so darn easy to make. Chicken, carrots, celery, onion, wild rice, seasonings, and cream. Pair with a piece of crusty bread on a bloodless night time for the ideal meal!

INGREDIENTS

  • 1 cup raw wild rice
  • 1 pound poultry breasts
  • 2 cups mirepoix (chopped celery, carrots, and onions)
  • 6 cups fowl broth
  • 1 teaspoon rooster seasoning
  • 1/2 cup butter
  • 3/4 cup flour
  • 2 cups total milk
  • a few tablespoons white wine (optional)
  • up to two cups extra milk or water

INSTRUCTIONS

Rinse the wild rice. Place the raw wild rice, uncooked chicken, mirepoix, fowl broth, and fowl seasoning in a crockpot. Cover and cook dinner on low for 7-8 hours. The rooster need to be cooked thru and the rice have to be soft. There will be more liquid in the crockpot; do now not drain.

Remove the poultry breasts from the crockpot and permit to cool slightly. Using two forks, shred the chicken. Return the shredded fowl to the crockpot.

When rice and hen are completed cooking, soften the butter in a saucepan. Add the flour and let the combination bubble for 1 minute. Slowly whisk in the total milk till a thick, creamy combination forms. Stir in the wine.

Add this to the rice and rooster in the crockpot and stir to combine. Add greater water or milk to modify the consistency as you like it. Season with extra salt and pepper.
