Grilled Steak and Veggie Roll-Ups
Ingredients:
- 1 pound flank steak or sirloin steak, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 zucchini, julienned
- 1 yellow squash, julienned
- 1 small onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Toothpicks or kitchen twine for securing the rolls
Directions:
- Prepare the Vegetables: Slice the bell peppers, zucchini, yellow squash, and onion into thin strips. Set aside.
- Season the Steak: Lay out the thinly sliced steak on a cutting board. Drizzle with olive oil and season with garlic powder, onion powder, salt, and pepper.
- Assemble the Roll-Ups: Place a few strips of each vegetable at one end of each steak slice. Roll up the steak around the vegetables and secure with toothpicks or kitchen twine.
- Grill the Roll-Ups: Preheat a grill or grill pan to medium-high heat. Grill the steak roll-ups for about 2-3 minutes per side, or until the steak is cooked to your desired level of doneness and the vegetables are tender-crisp.
- Serve: Remove the toothpicks or twine before serving. Serve the roll-ups with a side of your choice, such as a fresh salad or grilled potatoes.
