Hamburger Potato Casserole

Ingredients

  • 1 1/2 pounds ground beef
  • 4 large russet potatoes, peeled and thinly sliced ​​
  • 1 medium onion, chopped
  • 2 cups grated cheddar cheese
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 3/4 cup Milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped fresh parsley for garnish

Instructions

Preheat your oven to 375°F (190°C). Grease a 9-by-13-inch baking dish with cooking spray or olive oil.
In a large pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.Add the ground beef to the pan and cook until golden brown and no longer pink. Break it up with a spoon as you go. Drain off excess fat.
Season the minced meat with garlic powder, paprika, salt and pepper. Stir well to combine.
In a separate bowl, stir the condensed cream of mushroom soup and milk until smooth.Place half of the thinly sliced ​​potatoes in the bottom of the prepared baking dish, overlapping slightly.
Spread half of the cooked ground meat mixture over the potatoes, followed by half of the grated cheddar cheese.
Repeat layers with remaining potatoes, ground beef mixture, and cheddar cheese.
Pour the thickened soup mixture evenly over the casserole.
Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.Remove the foil and continue baking for another 15 to 20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
Remove the casserole from the oven and let it cool for a few minutes before serving.
Before serving, garnish with freshly chopped parsley if desired.
