Homemade Flatbread

Ingredients:

  •  4 cups all-purpose flour
  •  1 packet (2 1/4 teaspoons) active dry yeast
  •  1 teaspoon sugar
  •  1 teaspoon salt
  •  1 1/2 cups warm water
  •  2 tablespoons olive oil
  •  1 egg yolk
  •  1 tablespoon water
  •  Sesame seeds and nigella seeds for topping

Instructions:

1. **Prepare the Dough:**
– In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 10 minutes until it becomes frothy.
– In a large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
– Mix until a soft dough forms. If the dough is too sticky, add a little more flour. If it’s too dry, add a bit more water.

2. **Knead the Dough:**
– Transfer the dough to a lightly floured surface and knead for about 10 minutes until smooth and elastic.
– Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

3. **Shape the Bread:**
– Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
– Punch down the risen dough and divide it into 4 equal pieces. Shape each piece into a ball.
– Flatten each ball into a round disk about 1/2 inch thick and place them on the prepared baking sheet.
– Use your fingers to make indentations all over the surface of the dough.

4. **Prepare for Baking:**
– In a small bowl, beat the egg yolk with 1 tablespoon of water. Brush this mixture over the top of each piece of dough.
– Sprinkle sesame seeds and nigella seeds on top.

5. **Bake the Bread:**
– Bake in the preheated oven for 20-25 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
– Remove from the oven and let cool on a wire rack.
