Mexican Street Corn

This street corn is easy to make on the grill and is the perfect side dish that everyone will enjoy!

Ingredients:

  • 4 ears of corn
  • ¼ cup Crema Mexican Agria Sour Cream (regular sour cream works too)
  • ¼ cup mayonnaise
  • ½ cup crumbled Cotija cheese
  • 2 garlic cloves, minced (or finely chopped)
  • ¼ teaspoon fine sea salt
  • Juice and zest of one lemon
  • 1/4 cup finely chopped coriander
  • ½ teaspoon chipotle chili powder.

Instructions:

Heat your grill to around 200°C.
You can grill corn with or without the husk. I removed the husk to make sure there were some nice grill marks on the corn and because I feel like this gives it a nice grilled flavor.FOR THE SHELLS: Soak the corn in water for 10 minutes before roasting. TO REMOVE SHELLS: Lightly spray each ear with cooking spray.**

Place corn on grill and grill for about 12 minutes, turning ears back 1/4 every 3 minutes.

Make the topping sauce by combining Cacique® Crema Mexican Sour Cream, mayonnaise, Cotija cheese, garlic, lime zest and juice, and cilantro.

Generously spread each ear of corn with the cheese mixture, sprinkle with some chipotle chili powder and top with some Cotija cheese and cilantro.
