Mixed Berry Crumble Tart

Ingredients:

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 2-3 tablespoons ice water

For the Filling:

  • 2 cups fresh strawberries, hulled and halved
  • 2 cups fresh blueberries
  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For the Crumble Topping:

  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Directions:

  1. Prepare the Crust:
    • In a food processor, combine flour, sugar, and salt. Pulse to mix.
    • Add cold, cubed butter and pulse until the mixture resembles coarse crumbs.
    • Add the egg yolk and ice water, one tablespoon at a time, pulsing until the dough comes together.
    • Press the dough into the bottom and up the sides of a tart pan. Chill in the refrigerator for at least 30 minutes.
  2. Prepare the Filling:
    • Preheat the oven to 375°F (190°C).
    • In a large bowl, combine strawberries, blueberries, raspberries, sugar, cornstarch, lemon juice, and vanilla extract. Mix gently to coat the berries.
  3. Prepare the Crumble Topping:
    • In a medium bowl, combine flour, oats, brown sugar, cinnamon, and salt.
    • Add melted butter and mix until the topping forms coarse crumbs.
  4. Assemble the Tart:
    • Remove the tart crust from the refrigerator and pour the berry mixture into the crust, spreading it out evenly.
    • Sprinkle the crumble topping over the berries, covering them evenly.
  5. Bake:
    • Bake the tart in the preheated oven for 45-50 minutes, or until the topping is golden brown and the berry filling is bubbly.
    • Allow the tart to cool before serving to allow the filling to set.
  6. Serve:
    • Serve the tart warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
