Slow Cooker Chicken and Stuffing Recipe
Ingredients
- 4 boneless, skinless chicken breasts
- 1 package (6 ounces) stuffing mix
- 1 cup chicken broth
- 1 can (10.5 ounces) cream of chicken soup
- 1/2 cup sour cream
- 1 cup frozen mixed vegetables (such as carrots, peas, corn, and green beans)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
Instructions
- Prepare the Slow Cooker:
- Spray the inside of your slow cooker with non-stick cooking spray or lightly grease it.
- Layer the Ingredients:
- Place the chicken breasts in the bottom of the slow cooker. Season them with salt, pepper, and dried thyme.
- In a medium bowl, mix together the stuffing mix and chicken broth. Spread the stuffing mixture evenly over the chicken.
- In another bowl, whisk together the cream of chicken soup and sour cream. Pour this mixture over the stuffing.
- Add the frozen mixed vegetables on top of the soup mixture. Sprinkle dried parsley over the vegetables.
- Cook:
- Cover the slow cooker with its lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
- Serve:
- Once the cooking time is complete, gently stir the vegetables and stuffing together.
- Serve the chicken and stuffing with the vegetables on the side. Enjoy your comforting meal!
