Slow Cooker Chicken and Stuffing Recipe

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 package (6 ounces) stuffing mix
  • 1 cup chicken broth
  • 1 can (10.5 ounces) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup frozen mixed vegetables (such as carrots, peas, corn, and green beans)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Prepare the Slow Cooker:
    • Spray the inside of your slow cooker with non-stick cooking spray or lightly grease it.
  2. Layer the Ingredients:
    • Place the chicken breasts in the bottom of the slow cooker. Season them with salt, pepper, and dried thyme.
    • In a medium bowl, mix together the stuffing mix and chicken broth. Spread the stuffing mixture evenly over the chicken.
    • In another bowl, whisk together the cream of chicken soup and sour cream. Pour this mixture over the stuffing.
    • Add the frozen mixed vegetables on top of the soup mixture. Sprinkle dried parsley over the vegetables.
  3. Cook:
    • Cover the slow cooker with its lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  4. Serve:
    • Once the cooking time is complete, gently stir the vegetables and stuffing together.
    • Serve the chicken and stuffing with the vegetables on the side. Enjoy your comforting meal!
