Slow Cooker Creamy Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts, cut into pieces
  • 1 package (8 oz) cream cheese, cut into cubes
  • 1/2 cup grated Parmesan cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • Cooked pasta or rice for serving
  • Fresh parsley, chopped for garnish (optional)

Instructions:

  1. Prepare the Slow Cooker: Spray the inside of the slow cooker with non-stick cooking spray.
  2. Layer the Ingredients: Place the cut chicken breasts in the bottom of the slow cooker. Sprinkle the garlic powder, onion powder, dried thyme, dried parsley, salt, and black pepper over the chicken.
  3. Add the Cream Cheese and Soup: Scatter the cubes of cream cheese on top of the chicken. Pour the cream of chicken soup over the cream cheese and chicken. Sprinkle the grated Parmesan cheese on top.
  4. Add the Broth: Pour the chicken broth over the top of all the ingredients.
  5. Cook: Cover and cook on low for 4-6 hours, or until the chicken is cooked through and tender.
  6. Stir and Serve: Before serving, stir the mixture to combine the melted cream cheese with the chicken and sauce. Serve over cooked pasta or rice.
  7. Garnish: Garnish with fresh chopped parsley if desired.
