Smoked Pork Shoulder Recipe

Ingredients:

  • 1 pork shoulder (8-10 pounds)
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper (optional)
  • 1 cup apple juice (for basting)
  • 1 cup barbecue sauce (for glazing)

Instructions:

  1. Preparation: Rinse the pork shoulder under cold water and pat it dry with paper towels. Place the pork shoulder in a large aluminum pan.
  2. Marinade: In a small bowl, mix the olive oil, apple cider vinegar, and brown sugar. Pour this mixture over the pork shoulder, making sure it is evenly coated.
  3. Dry Rub: In another bowl, combine the paprika, garlic powder, onion powder, chili powder, salt, black pepper, cumin, and cayenne pepper (if using). Rub this mixture all over the pork shoulder, ensuring it is well covered.
  4. Smoking Setup: Preheat your smoker to 225°F (107°C). Use wood chips of your choice (hickory, apple, or mesquite work well) for added flavor.
  5. Smoking Process: Place the pork shoulder in the smoker, directly on the rack or in the aluminum pan. Smoke for approximately 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C). This can take anywhere from 12 to 16 hours depending on the size of your pork shoulder.
  6. Basting: Every hour, baste the pork shoulder with apple juice to keep it moist and add flavor.
  7. Glazing: In the last hour of smoking, brush the pork shoulder with barbecue sauce. Let it cook for an additional hour to allow the glaze to set.
  8. Resting: Once the pork shoulder reaches the desired internal temperature, remove it from the smoker and let it rest for at least 30 minutes before shredding.
  9. Serving: Shred the pork shoulder using two forks, discarding any excess fat. Serve with additional barbecue sauce, if desired, and enjoy!
