Ingredients:

  • 8 cups mini pretzel twists or squares
  • 1 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 cup chopped nuts (such as pecans or walnuts)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper.
  2. Prepare Caramel Coating:
    • In a medium saucepan, melt the butter over medium heat. Add the brown sugar and corn syrup, stirring until the mixture comes to a boil. Let it boil for 5 minutes without stirring.
  3. Add Vanilla and Baking Soda:
    • Remove the saucepan from heat and stir in the vanilla extract and baking soda. The mixture will bubble up, so stir carefully.
  4. Coat Pretzels:
    • Place the pretzels in a large mixing bowl. Pour the caramel mixture over the pretzels, tossing to coat them evenly. Add the chopped nuts and mix well.
  5. Bake:
    • Spread the coated pretzels in a single layer on the prepared baking sheet. Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even coating.
  6. Cool:
    • Remove the pretzels from the oven and let them cool completely on the baking sheet.
  7. Serve:
    • Once cooled, break apart any clumps and serve the sweet and savory caramelized pretzel bites.
