Perfect for those of us craving something sweet but not too sweet, treacle cookies are a treat not to be missed.When it comes to combining molasses cookies, think cozy comfort. They taste perfect on their own, but they are also absolutely divine with a glass of cold milk or a hot cup of coffee. For a more decadent treat, place a scoop of vanilla ice cream between two cookies for an impromptu dessert that’ll make you swoon.

Ingredients
– 2 1/4 cups all-purpose flour
– 2 teaspoons baking powder
– 1 teaspoon ground cinnamon
– 1 teaspoon ground ginger
– 1/2 teaspoon ground cloves
– 1/4 teaspoon salt
– 3/4 cups unsalted butter , softened
– 1 cup dark brown sugar, packed
– 1 large egg
– 1/4 cup molasses
– 1/2 teaspoon vanilla extract
– granulated sugar for rolling

Instructions

1. In a medium bowl, add flour, baking powder, cinnamon, Mix ginger, cloves and salt.Put aside.
2. In a large bowl, beat butter and brown sugar with an electric mixer until fluffy.
3. Add egg, molasses and vanilla extract to butter mixture and stir until well combined.4. Gradually mix the dry ingredients with the wet ingredients until a dough forms.
5. Cover the dough with cling film and let it rest in the fridge for at least 1 hour (this also promotes flavor development!).6. Preheat the oven to 175°C (350°F) and line the baking sheets with baking paper.
7. Roll the dough into 1-inch balls, then roll each ball in granulated sugar to coat.
8.Place the dough balls on the prepared baking sheets about 2 inches apart.
9. Bake for 8-10 minutes or until the edges are set but the center is still soft.
10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Variations and Tips:

For a special twist, you can add 1/2 cup chopped nuts or dried fruit to the dough before cooling.
– Do you want to add a special touch to the taste? Add a pinch of black pepper or allspice to the dry mixture. Trust me; It’s a turning point!
– For a fancier finish, drizzle the cooled cookies with a simple icing of powdered sugar and milk.
